Watermelon Salad with Honey Jalapeño Rose Dressing

This watermelon salad is summer on a plate: sweet and juicy, with a little heat all blended together. The jalapeño adds a brightness to the salad, enhancing the watermelon and adding character to the fresh acidity of the rosé-based dressing. You are welcome to let the fruit sit for a few hours in the fridge, as it soaks up the dressing into every bit. If you are tempted, dive right in and enjoy an equally delicious and refreshing bite. Ingredients

– 1 small jalapeiio
– 2 Tbsp honey
– ¼ cup A to Z Rosé wine
– ½ tsp sea salt
– 1 watermelon
– 2 sprigs mint

Directions

Thinly slice the jalaperio and remove the seeds and membrane. In a small bowl whisk together the honey, rose and sea salt, until fully combined and the salt is dissolved. Stir in the jalaperio and allow to sit at least 30 minutes in the fridge for the jalaperio to infuse.

Slice the watermelon into small triangles and remove the rind. Place in a serving bowl. Pour the dressing over the fruit evenly and toss gently to combine. Remove the mint leaves from the stem and garnish the salad. Serve immediately or allow to sit in the fridge 30 minutes for the dressing to fully absorb into the fruit.

Store leftovers in an airtight container in the fridge for up to 3 days. Note: the longer you allow the jalaperio infuse in the dressing and salad, the more intense the heat and Aavor.
